Assyrian Food...

Here's an Assyrian soup recipe that is sure to warm you up on a cold day.

2 lbs. Ground beef
green onions
1 green pepper
4 leafs basil
1 tsp. paprika
1 egg
1 cup pirda (bulgar) course or full grain
1 quart water
1 onion
1/8 cup butter
1 28-oz. can crushed tomatoes
1 tablespoon tomato paste


Combine beef, green onion, green pepper, basil, paprika and egg. Form in to 3" balls.

 

Boil pirda in water in 2-quart saucepan over medium heat untill pirda is half cooked (about 7 minutes). Remove from heat and combine with meatballs.

Fry the onion in butter in a deep frying pan, add crushed tomatoes and tomato paste. cover and simmer for five minutes.

Add pirda and meatballs, let simmer for five minutes and serve.
