Patcha

If you are adventurous (or traditional), you can include other ingredients with the stew such as - properly cleaned - lamb head, stuffed tripe, sausage, etc.

2 16-oz. cans garbanzo beans
1 teaspoon salt
2 cloves garlic
water
2 sets of cleaned lamb, beef, or pig feet
4 cloves garlic, crushed
2 cups lemon juice
4 Pita breads, quartered

Place garbanzo beans, salt and garlic in boiling water. Let boil for 5 minutes.

Add the lamb, beef, or pig feet.

Let boil, reduce heat to medium, let cook until meat separates from bones (about 2 hours). Remove from heat.

To serve: In a small serving bowl, combine the garlic and lemon juice. Place Pita breads in a serving plate, pour Patcha over the pita bread, then spoon a small amount of the garlic-lemon juice mixture over the Patcha. Let bread soak before eating.
